I do a combination of the two. I run officially-created teams, but I also run my own tag teams. For example, for a while in GLITTER, I ran a Duo called Dis-Arm-Ers, consisting of R. Honda and Butterfly Haley Jean, both known for their arm submission finishers. Once in my IFC fed, my Duos Champions were Buck Tomkins and Remington XT, who represented their Bunkhouse Camp, which is another part of this game that I run. One time, I had a Trio named Shadow Law, consisting of Hollywood Gunn, Torn and Vain, very much a callback to Shadaloo in Street Fighter (also fun fact: the Shadow Law name comes from the mispronunciation of the organization in different Street Fighter media, like the live action film and Street Fighter II: The Animated Movie.)
In my IFC and GLITTER feds, I run factions (called Camps for that real fight feel.) For that I also run official and unofficial ones. Four Hordesmen would be an example of an official Camp, as would be groups like Space Terrorism Unit, Supremacy and the Zone Defender League.
I also run A LOT of Camps of my own creation. Going back to the Elite 8 story, after they were beaten, I had Demtor, LMS and the Second Realm Saints defect PMI and create the Mystical Realm, with the revealed Infinitus at its head. I have a whole stable of luchadors that I call Legado de Lucha (Legacy of Lucha.) I have my own version of ROH's S.C.U.M. called D.U.S.T. (Destruction, Unrest, Sacrilege & Turmoil.) I created the Cross Guard out of a bunch of CC's guys to have a rivalry with the ZDL. I made my own Hurt Business/Beat Down Clan, and called them Combat Enterprise. I even took a bunch of masked foreign gimmicks (and Tiki Boom) put Professor Kurushimi as their leader, and named them the International Men of Mystery.
For IFC, I run only exclusively Camps. Every person on that roster is assigned to a Camp of some kind. Stuff like this helps booking Trios Championships, same with GLITTER, which has a kind of Main Unit as well, and I'm in the process of crowning Trios (named Triple Threat) Champions in a weird round robin that involves scoring via eliminations within a time limit instead of just winning the match.

I do both. I use the official teams but if two guys look like they would team then I will team them up.

There are some good teams compiled if it helps, but is good to think of your own team combos.
If you are running a fed with story lines(reason to fight). Looks like that wedding has dropped a story line idea for your fighters.
Could be a good celebration wedding angle like a Machoman/Miss ELizabeth style wedding? Or start of a feud like Test vs Triple H/ Stephanie McMahon aka The McMahon-Helmsley Era.
Or a goofy angle. A couple of fighters are attending a wedding of another fighter. One accidentally goes into the wedding cake. Were the pushed as a setup? Was it an accident or on purpose. Many ways to go in the story line.

I totally agree about storylines. Like in my IFC, Tick Tock is a manager more than a fighter these days. That's really lead to a lot of good storyline stuff more than him being a mediocre fighter.

Boy, were we total opposites. Early on, SOMEHOW, Tick Tock was THE man to never hold the Grand Championship. Now he's more of a manager, Duos fighter with Rabbid, and occasional Jr. Heavy guy, but back then, the guy somehow had a better winning percentage than Rabbid did.
